SPAGHETTI WITH ZUCCHINI THINLY SLICE 2 LBS OF ZUCHINNI, AN ONION & 6 PLUS CLOVES OF GARLIC, COOK SLOWLY IN A GENEROUS 1/2 to 1 CUP OF GOOD OLIVE OIL, I LIKE ROSEMARY EVOO, FOR 45 MIN TO AN HOUR. ADD 1/2 POUND OF COOKED SPAGHETTI, PLUS 1/2 CUP OF THE PASTA WATER. GARNISH WITH FRESH PARSLEY & PARM
FRESH SPINACH OR ASPARAGUS
A BAG OF SPINACH OR FRESH ASPARAGUS DRIZZLED WITH A TABLESPOON OR SO OF MYERS LEMON OLIVE OIL, A SPRINKLE OF HIMALAYAN SALT, MICROWAVE, GRILL OR SAUTE FOR JUST A FEW MINUTES. SERVE, FRESH & GREEN! BEAUTIFUL AS A BED FOR SALMON!

FRESH BRUSSEL SPOUTS OVEN ROAST AND THE LAST FEW MINUTES TOSS WITH FIG BALSAMIC VINEGAR FOR A TERRIFIC SWEETNESS!

IN CAST IRON SKILLET ADD 1/2 CUP OF EXTRA VIRGIN OLIVE OIL & CHERRY TOMATOES< COOK ON HIGH HEAT UNTIL THEY START TO POP. ADD 1/2 CUP SLICED SHALLOT OR ONION, SLICED GARLIC, A TALESPOON OF SUGAR & A CUP OF DRY SHERRY & BIG PINCH OF RED PEPPER FLAKES. MOVE TO 400 DEGREE OVEN & ROAST FOR 20-30 MINUTES. ADD COOKED PASTA OF YOUR CHOICE & A LITTLE PASTA WATER IF NEEDED.

BOIL 8 OZ PASTA SHELLS UNTIL AL DENTE, RESERVE A CUP OF THE PASTA COOKING WATER.
CHOP A RED PEPPER, ONION, 8 OZ MUSHROOMS & FEW CLOVES OF GARLIC. SAUTE IN ITALIAN HERB OLIVE OIL with SAVVY BITES TRADITIONAL ITALIAN SPICES UNTIL TENDER. ADD TO SKILLET
HOT OR SWEET ITALIAN SAUSAGE, SQUEEZED OUT OF CASING INTO RUSTIC MEATBALLS & BROWN. ADD LARGE CAN OF DICED ITALIAN TOMATOES & PINCH OF RED PEPPER FLAKES, SIMMER 30 MINUTES.
MIX RICOTTA, AN EGG, PARMESAN & PARSLEY & STUFF SHELLS WITH MIXTURE. PLACE IN A CASSEROLE DISH. SPOON MEATBALL SAUCE MIXTURE OVER & AROUND SHELLS, SPRINKLE WITH CHEESE OF YOUR CHOICE & BAKE 20 MINUTES. GARNISH WITH FRESH PARSLEY, ENJOY!
